Ingredients

  • 4 Tbsp (55 g) unsalted butter, melted
  • 1 large (140 g) bananas ripe
  • 1/4 cup (50 g) soft brown sugar
  • 1/4 cup (50 g) granulated sugar
  • 1/3 cup (80g) Greek yogurt
  • 1 large egg
  • 1 teaspoon vanilla paste or extract
  • 1 cup (125 g) all-purpose flour
  • ¾ teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 Tbsp (30 g) milk at room temperature

Small Batch Cream Cheese Frosting

  • 2 oz (55g) cream cheese, softened
  • 2 tbsp (28g) unsalted butter, softened
  • 1 cup (120g) powdered sugar
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Mash bananas in a mixing bowl, then whisk in sugar, melted butter, Greek yogurt, egg, and vanilla until smooth.
  2. In a separate bowl, whisk together flour, baking powder, baking soda and salt.
  3. Add the dry ingredients to the wet mixture, stirring gently. Mix in the milk until just combined.
  4. Pour batter into a greased and lined 6-inch cake pan.
  5. Bake the cake in the air fryer at 320°F (160°C) for 25 minutes. Insert a toothpick into the center of the cake. If it comes out clean, the cake is done. If it's not clean, lower the heat to 300°F (150°C), bake the cake for another 5 minutes, and check again. Repeat this process until the toothpick comes out clean.
  6. Let the cake cool before slicing. Serve plain or top with cream cheese frosting.

Frosting

  1. Beat cream cheese and butter together until smooth.
  2. Gradually add powdered sugar, then mix in vanilla and salt.
  3. Spread over the cooled banana cake.
